What’s for Dinner :: Shashuka

We all have such days in our kitchen life when we are short on ingredients or time or both. Eggs for Dinner is a lifesaver in such conditions. I am a crazy egg person and I would eat eggs in pretty much any form, and for any meal of the day. 

Today I am sharing this quick recipe of Shashuka. It’s a one-skillet meal of eggs baked in a tomato sauce spiced with cumin. Scoop it up with a crusty baguette, pita or any kind of bread and enjoy the spicy, rich goodness.IMG_7967


I onion, thinly sliced

3 garlic cloves, finely chopped

1/2 tsp ground cumin

1/2 tsp ground coriander

1 tsp dried tarragon (or any other herb)

1 14-ounce can of plum tomatoes

5 eggs

salt and pepper

3 tbsp olive oil


Heat oven to 375 degrees. 

Heat oil in a large skillet over medium-low heat. Add onion and saute. Cook gently until soft. Add garlic and cook until fragrant, 1 to 2 minutes; stir in cumin, coriander and herbs, and cook 1 minute. Pour in tomatoes and season with salt and pepper; simmer until tomatoes have thickened, about 10 minutes. 

Gently crack eggs into skillet over tomatoes. Sprinkle some more salt over the eggs. Transfer skillet to oven and bake until eggs are just set, 7 to 10 minutes. Serve with bread.IMG_7955IMG_7966

    I made Shashuka once when I was on a protein diet but I made it in a pan. I’m not much of a cook but it still turned out ok. Yours look delicious.

      I made it in pan too. I often just cook it on the stove and not in th oven. Depends on my mood and the quanity. 😊
